Aloo Methi Dry


Aloo Methi Dry is an easy and delicious dish.It is a low fat dish also..It is one of the amazing northie dish and my friends loved it wen i cooked it!!!

For two persons:

3 Potatoes ,boiled and cut into small cubes

1 bunch of fenugreek leaves/methi leaves cleaned

1 Onion freshly chopped

1 tomato finely cut

2 tbspn oil

1/2 teaspoon mustard seeds

1/2 teaspoon jeera seeds

1/2 teaspoon turmeric powder

1 teaspoon chilli powder

1/2 teaspoon coriander powder

salt to taste

2 Dried Red chillies

Preparation:

1.Heat the pan and pour 1 tablespoon of oil.

2.Add the mustard seeds, jeera seeds and red chillies and fry them for 10 seconds till they are completely sputtered

3.Add the finely cut onion and fry the onion till they are light brown

4.After this add the finely cut tomatoes .Dont add tomato puree as this may spoil the dish

5.Fry this in medium flame till the tomatoes are soft.

6.Add the cooked potato cubes to this and fry.You may add the remaining oil when frying the potato

7.Once the potatoes are light brown,add the fenugreek leaves.

8.Now its time to add the masala's.Add the turmeric powder,chilli powder and dhania/coriander powder

9.Add salt and mix the curry very well.Make sure the potatoes are not smashed.

10.Now add little water and cover the curry with a lid and cook for 10 minutes.

11.Open the lid and garnish with coriander leaves and Red Chillies..
